#eatsByVix: Self-Care for the Soul, Cooking for One
Cooking for one is challenging but it is also so rewarding. Starting with a glass of my favorite Pinot Noir by Meiomi Wines, I take you through one of my weekly staples, Chicken, Onion and Tomatoes for one. Perfect for pasta, quinoa and over salad, this dish is one you will cook over and over and over again.
- large yellow onion
- 1 package of chicken thighs
- 1 package of cherry tomatoes
- 1 clove of elephant garlic
- Extra Virgin Olive Oil
- Salt and pepper to taste
Put EVOO (2-3 swirls around the pan) in a pan on medium heat. Add diced garlic
Chop up the chicken into cubes (as illustrated in the YouTube video from The Get!)
Chop up the onion and add that to the oil and garlic with tomatoes
Add in salt and pepper to taste
Add in chicken and cover
Let cook until chicken is white inside. Serve over Quinoa or Banza pasta. Store in fridge for up to one week
