Vix’s Volcanic Quinoa Bowl
This is a great recipe for breakfast, especially on days when you think you’re not going to have time for a hearty lunch.
- ⅓ cup of quinoa
- 2 eggs
- Sprinkle of Follow Your Heart Dairy-Free Parmesan
- 1 tbsp of Follow Your Heart Vegenaise Mayo
- Salt, Pepper to taste
Spray frying pan with coconut oil non-stick spray
Cook two eggs over easy with salt and pepper to taste
Heat quinoa in a bowl in the microwave, frozen quinoa works best in this case!
Put eggs over quinoa, add cheese and mayo
Mix and serve
This is one of my favorite breakfasts and lunches when I’m having a busy week of work -- for an added bonus, if you’ve followed the Meal Prep Like a Boss plan, you can also add in some chicken from your roast chicken to up the protein on this bowl.
